Greenstar Farm was established by Lauren Cooper and Andrew Schenker in 1991 after interning at farms in West Virginia, where they learned how to harvest an abundance of food from small amounts of land. They grow a variety of certified organic produce on only two and a half acres of cultivated terraces on the outskirts of Blacksburg.
Lauren and Andrew’s harvest is comprised of a range of goods that includes lettuces, salad greens, beans, broccoli, garlic, onions, potatoes, peppers, tomatoes, and herbs as well as homemade salsa, pesto, tomato sauce, cookies and scones. In addition to farming, Lauren began making herbal remedies for her family and now offers an herbal apothecary at the Blacksburg Farmers Market.
Lauren enjoys the seasonal nature of farming as it provides more time to spend with her family during the winter. She sums it up this way: “My husband and I chose organic farming as a way of life because we were interested in creating a livelihood for ourselves that didn’t clash with our ideals. We wanted to be able to create for ourselves a way to earn an income on our terms and to be able to feel good about how our lifestyle affected the environment. Our farm is intended to be a sanctuary for people and wildlife as well as a livelihood.”
